Cheezy Brussel sprouts and walnuts

It’s getting cold and brussel sprouts are in the shops.
I’d been fancying this for a week or so but wasn’t sure how it would turn out but it was super good! The sweetness from the red onion really worked well with the roasted brussel sprouts.


  • Brussel sprouts
  • Walnuts
  • Red onion
  • Garlic
  • Vegetable oil
Cheeze sauce
  • butter
  • Flour
  • Soy milk
  • Tesco’s mozzarella cheese
  • Mustard
  • Celery salt
  • Nutritional yeast
  • Salt and pepper


  • Farfalle pasta


  • In a tray, place the sprouts, walnuts, red onions and garlic on a tray and roast for 30 mins on 180 degrees, little oil.
  • In a saucepan add the dairy free spread in the pan and melt. Once melted add the flour in to make a white sauce. Once it has combined together to make a paste like consistency then add in the soy milk.
  • Once you’ve made the basic white sauce you can start to add your flavourings. So we added vegan cheese, nutritional yeast to make it cheesier, celery and salt and pepper to taste.
  • Cook the pasta as the packet suggests. Once it has all been cooked, combine all together and mix thoroughly and serve!
