Buffalo Cauliflower wings

So recently all I want to eat is cauliflower buffalo wings. So I went to the supermarket got a massive cauliflower and made these!

So if you’d like to know how to make these, just keep reading!

Ingredients:

  • Large cauliflower

Batter mixture

  • 1/2 cup All purpose flour
  • 3/4 cup Plant milk (we used soya)
  • 1 tbsp garlic powder
  • 1 tbsp smoke paprika
  • 1 tbsp old bay seasoning
  • Salt and pepper to taste

Buffalo sauce mix

  • Franks hot sauce
  • Vegan butter (if you want to cool the franks hot sauce down)
  • White vinegar
  • Oil

Method

Take you cauliflower and cut the stalk out and remove. From this point you should be able to break off the florets in nice big “wing” like pieces.

I popped them in the oven at 180 degrees from around 15 mins just to soften them up a little. I popped a little salt over these to bring out the flavour before placing in the oven.

While the cauliflower is cooking, I popped on a saucepan with some oil in it deep enough to cover each floret. I popped it on a medium to high heat so it was ready to use once the cauliflower was out. You can also take this time to make the batter mix. Combines the dry ingredients first, add the milk and whisk until smooth. Add more flour or milk to get your consistency how you like it.

After 15 mins, remove the cauliflower from the oven, I left it to cool a little so it was easier to pick up.

Take a floret and place in the batter mixture and make sure it is well covered and then place in the oil. They won’t need too long to cook, so remove them once the batter is golden and crispy.

Pop them on a piece of kitchen roll to drain the oil out of them.

In a bowl, add the franks hot sauce, butter (if needed) and vinegar to taste. Roll the battered cauliflower around in this mixture and serve warm!

We had this was some vegan sour cream, we will be attempting a vegan blue cheese sauce in future for these though!
