Vegan Key Lime Pie

Me and another Instagram page, vegan and proud (go check him out) recently decided to collaborate. We each chose a recipe of each other’s and made it.

I chose to make the key lime pie! It was absolutely delicious and so easy to make! You can whip it together in about 20 mins and pop in the freezer and it taste incredible.

Here’s the recipe and instructions from vegan and proud blog:

Ingredients

Crust

  • 1 1/2 cups oats
  • 1 1/2 cups walnuts
  • 4 tablespoons coconut oil (melted)
  • pinch sea salt

Filling

  • 1 1/2 cups raw cashews (soaked)
  • 1 cup coconut milk
  • 1/3 cup maple syrup
  • 1/3 cup organic cane sugar
  • 2/3 cup lime juice
  • 1/3 cup coconut oil (melted)
  • Zest from 4 limes

Instructions

  1. Place the oats, walnuts and salt in a food processor and pulse until it becomes a fine meal. Add the coconut oil and pulse until well combined.

  2. Press the crust into a pie pan, spreading evenly across the bottom and sides, place in freezer while preparing the filling.
  3. Place all the filling ingredients into a high speed blender. Blend until completely smooth, pour the mixture on top of the crust and place the pie in the freezer for up to 4 hours.
  4. Slice the pie while frozen and let slices come to room temperature and dig in!
